Back In The Saddle Again!

I miss my teaching buddies this time of year. With the new school year starting this week, I feel the need to cheer them on by baking cookies. I plan to stop by school tomorrow and share my Cowboy Cookies. After three intense days of getting back in the saddle again, they will welcome a sweet cookie. 

My mom, Annelle Swearingen Hendley, loved this cookie recipe. I began using this recipe after getting it from Mrs. Stanford, the cafeteria manager at Smithville Academy in Smithville, Georgia. This was my first teaching year in 1972. My hubby Jeff and our girls love this recipe too. They put it only second in line to Grandma Swearingen's Hank's Belly Chocolate Chip Cookies.

Cowboy Cookies***Preheat Oven  To 375 Degrees***Ungreased Cookie Sheet
3 eggs
1 &1/2 cups butter
1&1/2 cups brown sugar
1&1/2 cups white sugar
1&1/2 tsp. soda
1/2 tsp. salt
1/2 tsp. baking powder
1&1/2 cups oatmeal
3 cups flour
12 oz. semi sweet chocolate chips

***Cream butter, add sugars and eggs one at a time. Beat well. Add oatmeal and sift soda, salt, baking powder and flour together. Add gradually to mixture. Add chocolate chips and mix well. Drop by teaspoonfuls onto cookie sheet. Bake @ 375 for 10 minutes.
