Hattie's Belly Is Full!


Today I baked my trial run of  Tea Cakes for my grandson's birthday in July. As you can see, I made sea creatures. They turned out well. The aroma and texture of these delicious cakes brought back fond memories of baking with Mama when I was little. She would bake these often, and when she had time, she would make cut out boy and girl shapes dressed in overalls, sashes and even frilly collars. Jeff and I sampled these tea cakes warm from the oven, and as my brother, Clint, would say,"they would make a rabbit slap a bear". James' birthday is July 29. He will be celebrating his first birthday. These soft tea cakes will be great, as he only has 6 teeth, and  is presently teething. I bet my girls, Jenny,( James' mom), Rebecca, (Auntie B) and Katie, (Aunt Kate) will recall when Cama made these for them when they were little girls. Here is the recipe if you want to make some little or big ones happy. Oh yes, remember you can roll 'em, pat 'em and mark 'em with a "B". 

Mama's Tea Cakes
Preheat oven to 350 degrees and lightly grease a cookie sheet.
(Use Electric Mixer or Mix by Hand)
*Cream 1/2 stick softened butter with 1 3/4 cups of sugar
*Add 2 eggs, one at a time.
*Add 1/2 tsp. vanilla flavoring
*Combine 4 cups self rising flour with 1/2 tsp baking powder, and add alternately with
1/2 cup sweet milk
***May chill in fridge for 30 minutes and then roll out small amounts on floured surface. Can use cookie cutters or roll in balls and flatten. Bake for 10 minutes, cool briefly. Simply must taste a tea cake while it is warm. Yum!

Meet "Hattie"!


I had a fortunate thing happen recently. I located one of Hank's long lost cousins. I named her Hattie. She is a bit cleaned up or reglazed. I'm not sure which one. She was floating around in cyber space on e-bay. I couldn't resist making a bid. I won the bid and just received her in the mail last week. She is in really good condition. I am toying with what her first batch of cookies might be. I think I am actually going to go for the teacakes. My grandson, James, is celebrating his first birthday next month. We plan to celebrate at the beach. I just may make marine shaped cookies. In fact I shall try my luck at making the teacakes 3-D as my Mom did for us when we were little. I will share with a photo soon on my trial run with this baking challenge. Hattie is quite charming don't you think?

Feeling Peachy?


I hope all of you are experiencing this season's peaches. Jeff and I recently found a great farmers fruit and vegetable stand that had a great Ruby Prince variety of peach. We were on our way to Albany,Georgia going south on interstate 75. We saw a sign for peaches at exit 142. Turning right off that exit,we were heading towards Fort Valley, Georgia, but just within less than a mile on the left, we bought a basket from a very friendly farmer and his grandson. They were absolutely delicious. I cannot wait for the Elberta variety in late July or early August. ELBERTAS are the best. Grandma Hendley's shortcut to a great fruit cobbler is a time saver to her lattice crust recipe from years ago. FRESH PEACH COBBLER**Melt one stick of butter, flood the bottom of a 9x13 glass dish with the melted butter. Mix 1 cup of sugar, 1 cup of all purpose flour, 1& 1/2tsp. baking powder, a pinch of salt and 1 cup milk. Pour this mixture over melted butter. Add 3-4 cups fresh peach slices on top of previous mixture.DO NOT STIR! Bake @ 350 preheated oven for 30-40 minutes. This is easy and DELICIOUS!

HANK'S BELLY CHOCOLATE CHIP COOKIES


From The Kitchen Of Martha Smith Swearingen 
Preheat Oven To 375 Degrees

3/4 cups brown sugar
3/4 cups white sugar
1 cup shortening
2 eggs
2 T. sour milk (sour milk with 1 T. lemon juice)
1 t. soda(stir in milk)
2 1/2 cups all purpose flour
1 t. salt
1 t. vanilla
1 pkg. chocolate chips (12 oz. semi-sweet)
***Chill and bake 10 minutes
